A wonderful appetizer, but equally wonderful main course!




CannonBelles Queso Fresco, shredded

Optional Ingredients:

Chicken (cooked)

Diced Onion

Diced Tomato

Anything else that sounds good to you!



Turn your stove burner on medium to medium-high (5-7 out of 10)

Very lightly butter one side of each tortilla with butter. ½ teaspoon should be plenty for a 12 inch tortilla.

Use a large frying pan or skillet, place on burner, and put 1 tortilla butter side down on the pan. Immediately spread the grated cheese thickly and evenly on top of the tortilla, followed by you choice of additional ingredients. Place the second tortilla on top, butter side up. Check every 30 seconds or so until the tortilla begins to brown. Flip it over, cook until it is browned, and remove from heat.

I find it easiest to use a pizza slicer to cut the quesadilla into appropriate sized wedges, and serve with salsa, sour cream, guacamole, or whatever makes you happy!
